Summer Ceviche with Popcorn and Herbs

1/2 lb. shrimp scallops and whitefish (1/2 lb. total)
1/2 red onion, diced
1 small serrano minced
1/2 cup popped popcorn
1/4 heirloom tomato diced
Thyme to taste
Chives to taste
Parsley to taste
Cilantro to taste
Salt to taste
White pepper to taste
Bonito flakes to taste
Juice of 6 limes
Little squeeze of fresh lemon juice

Combine all ingredients and allow to sit for 30 minutes. Stir well every 5 minutes.

Serve with your favorite chips.
