RECIPE: Desert Painted Sweet Potato Soup

Desert Painted Sweet Potato Soup With Sautéed Shrimp and Spicy Yogurt

1 ea diced sweet potato
2 c chicken stock
2 tbsp diced onions
1 tsp salt
1 tsp butter
½ c coconut milk
Fresh ginger root
Garlic clove

4 ea shrimp
Lime juice
Cayenne pepper
3 mint leaves

Sauté onions in butter until translucent. Add sweet potato and a section of diced ginger about ¾” by ¾”. Cover with chicken stock and boil until tender. Blend. Separate into two equal parts in 2 pots.

Sauté deveined and de-shelled shrimp in butter and add minced garlic.

To the yogurt add salt, pepper, lime juice and cayenne pepper to taste.

Add coconut milk to one of the pots of soup. Pour equal parts of soup to bowl and swirl. Garnish with diced shrimp, yogurt and mint leaves chiffonade.
