TexAZ Chipotle Chicken

As TexAZ owner Steve Freidkin explains to Scott Pasmore, Chipotle Chicken is one of the recipes that can be found in the upcoming “In the Heart of TEXAZ Cookbook.”

3 cans Ro-Tel tomatoes
1 chipotle pepper in adobo
1 tsp. minced garlic
1 tsp. whole Mexican oregano
1 tsp. ground cumin
2 whole cloves
1/3 tsp. black pepper
1 Tbsp. chicken bouillon paste
4 boneless chicken breasts
4 yellow onion slices 1/2-inch thick

Puree tomatoes, chipotle, garlic and seasonings in a blender cup until smooth. 

Dust the chicken breasts with flour and pan fry in a small amount of oil until golden on both sides. 

Add the puree and onion slices and cook over medium heat until the breasts are completely cooked. 

Serve over rice.
