Kickin' Crab Cakes

1 pound lump crab meat
1/4 cup mayonaisse
1/4 cup bread crumbs
2 Tbsp. brown mustard
1 tsp. blackening seasoning
1 egg

Combine all ingredients gently in a mixing bowl. Allow cakes to set for one hour. Portion into 4 cakes. Hand press patty and squeeze lightly to get the air out. Dust with flour and sauté in frying pan with 3 ounces of olive oil. Cook for 2-1/2 to 3 minutes on each side. Enjoy with fresh lemon or tartar sauce.
