Crab Cake Salad
1 lb crab meat
¼ cup mayonnaise
1 egg
1 oz. Green Onions
1 tbl Creole Mustard
2 tsp Horseradish
1 tbs Tabasco Sauce
¼ tsp White Pepper
1 cup crushed saltine crackers
1 tsp Old spice seasoning 

In a stainless steel bowl combine Mayonnaise, eggs, onions, mustard, horseradish, Tabasco, pepper, old spice seasoning and with a wire whip mix all well. Add crackers and with a rubber spatula fold in, Add CRAB MEAT AND FOLD IN WITH RUBBER SPATULA NOT BREAKING LUMP MEAT. Place in a 6 to 8 qt container. Cover, Label, Initial, Date and refrigerate. Form to 3 oz cakes and place in oven for 5 minutes or until golden brown served with salad mix and roasted garlic dressing.

Lemon Lime Roasted Shallot Vinaigrette
3 oz Shallots- peeled and roasted
¼ cup Fresh Lemon Juice
¼ cup Fresh Lime Juice
1 tbl roasted garlic
1 tsp kosher salt
1 tsp granulated sugar
1 cup olive oil

Place shallots in a 375 degree oven and roast for 25 minutes then puree shallots. Place all ingredients in a large stainless steel bowl and with a wire whip mix well then add oil in a slow string mix well. Place dressing in 8 to 8 qt plastic container. Cover, Label, Initial, Date and refrigerate.
