Sweet Potato Pancakes With Cranberry Apple Topping

365 Pancake Mix
1 cup leftover mashed sweet potatoes
Milk (Blue Diamond Almond Milk or water)
Butter (Smart Balance Omega-3)
Leftover cranberry apple conserve
Maple syrup

Mix pancake mix according to package directions.

Add mashed sweet potatoes to mix and combine. Do not over mix.

Cook pancakes according to package directions.

In a small pot, combine cranberry apple conserve and maple syrup (or agave, honey as low-sugar alternatives) and bring to a simmer. Turn to low. Serve over pancakes.
