Recipes for your leftover turkey

Chef Eddie Matney’s Turkey Tacquito’s

1 pound turkey (chopped)
1 cup Mashed Potatoes
½ cup shredded Cheese
1 Tbls. Chopped Cilantro
1 Tsp. Cumin
Salt and pepper to taste
12 Corn Tortillas

Procedure
1.Combine all of the above in a bowl and mix well. (Except for the tortillas)
2.Place 2 Tbls. potato mixture in the middle of the tortilla.
3.Roll the tortilla and fry until golden brown.


Turkey Sliders with Cranberry BBQ

1 cup Cranberry sauce
1 cup BBQ sauce
1 tsp. adobo sauce
1 Tbls. brown sugar
salt and pepper to taste

Procedure
1.Combine all of the above in a sauce pan and heat slowly.
2.Add your turkey to the sauce and simmer for 15minutes.
4.Place turkey BBQ on a slider bun and enjoy.


Turkey Sheperds Pie

1pound turkey (chopped)
1 cup of leftover veggies
½ cup of mushrooms
1 Tbls. Butter
½ cup of gravy
1 tsp. fresh thyme
salt and pepper to taste

Procedure
1.Sauté butter, turkey, veggies, mushrooms for 5 minutes.
2.Add thyme and gravy and simmer for 10 minutes.
3.Place the mixture in small oven safe bowl and  top with mashed potatoe.
4.Bake for 15 minutes and serve.
