Caramel Apple Bread and Caramel Apples

You can make the entire recipe from scratch but I have included a few short cuts to adapt the recipe our busy lives.
There is nothing wrong with going to your local grocery store and picking out your favorite pre-measured spice cake mix. Be sure to follow to cooking directions on the box.

If you want to make the spice cake from scratch here is a great recipe that works well with the moisture the apples will add.

Spice Cake Ingredients:
2 1/2 cups bleached all-purpose flour
1/4 cup cornstarch
4 tsps. baking powder
1/2 tsp. salt
2 tsps. ground ginger
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
1/2 tsp. ground cloves
1 cup milk
3 large eggs
2 tsps. vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Spice Cake Instructions:
Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9" pan.
Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a seperate bowl.
Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces.
Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.( Fold in apples, and toasted nuts if desired, until well incorporated. Drizzle top with caramel and gently ribbon through cake mix.)
Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 50 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

There are some great dried apples out there and grab a bottle of pre made caramel sauce and your set to go.  All you have to do is throw it together!

Caramel Apples Ingredients:
2  firm apples ( fuji, gala, granny smith)
1/4  cup brown sugar ( packed)
1/2  each lemon juiced
1 tsp.  cinnamon
1 tsp.  cornstarch
1 tsp.  water   

Caramel Apples Instructions:
Throughly wash apples. Core and thinly slice apples.
Toss apple slices with brown sugar, cinnamon, and lemon juice.
Place in a colander with a drip pan to cath the juices. Allow to macerate for 45 minutes. Use this time to make your cake batter.
Once the 45 minutes have passed there should be 1/4 cup of liquid in the drip pan. Heat this in a small sauce pan to a simmer.
Mix the water and starch together thouroughly and wisk into to apple juices. aloow to cook for 20 to 30 seconds until caramel like texture.
Fold in apples, and toasted nuts if desired,  until well incorporated.  Drizzle top with caramel and gently ribbon through cake mix before baking.
