Flat Iron Salad with Citrus Gorgonzola Vinaigrette

1-Tbsp. tarragon- minced
3 cloves whole garlic- minced
1 medium shallot- minced
1-cup olive oil
¼ cup Dijon mustard
½ cup Gorgonzola cheese
1/8 tsp. Tabasco
Salt and pepper
3 Tbsp. lemon juice
1/3-cup honey
4 cups baby field greens

Flat iron
One 10 oz flat iron steak
2 Tbsp. olive oil
2 cloves garlic- crushed
1 sprig rosemary

Marinate the flat iron steak in the olive oil, garlic and rosemary and set aside. Begin the dressing. In a large bowl, add the tarragon, garlic, shallot and the honey. Using a whisk, mix to combine. Add the Dijon and the lemon juice. Whisk to combine. Slowly drizzle the olive oil into the mixture whisking the entire time. When the mixture is homogeneous, add Gorgonzola. Mix gently as to not break up the cheese. Adjust seasoning with salt and pepper and a dash of Tabasco. For the steak, heat a grilling pan or an outdoor grill. Get the pan very hot. Season your marinated steak with salt and pepper. Sear on the grill for approximately 3 min. on each side. Take off heat and allow to rest before plating.
