Popcorn Rock Shrimp Tempura in Creamy Sweet Miso Sauce
Ingredients: 5 oz - Rock Shrimp
1 Oz. - Mixed Mushrooms, sauteed in Butter
2 Each - Asparagus, steamed and sliced
1 Oz. - Spicy Mayo (see recipe)
5 Cups - Tempura Batter (See Recipe)
1 Cup - Tempura Flour
1 sprig - Chervil
1 Oz. - Dengaku Miso (see recipe)
1 each - Lemon wedge
1 Tbl - Unsalted Butter
Step #1 Dust Rock Shrimp with Tempura Flour.
Step #2 Coat with Tempura Batter, and fry at 350 degrees.
Step #3 Sautee Mushroom and Asparagus with butter in a sauce pan.
Step #4 Add Tempura Shrimp, Dengaku Miso and Spicy Mayo to the pan.
Step #5 Toss until well coated.
Step #6 Garnish with chervil and 1/2 Lemon wheel
1 cup Best Foods Mayonnaise
1 Tblspn Sriracha (Vietnamese Garlic Chile Paste)**
1 tspn Sesame Oil
Step #1 Mix all three items in a mixing bowl and chill until ready to use.
Step #2 Place spicy Mayonnaise in squeeze bottle.
7 Cups Sake
7 Cups Shiro miso (white miso, same as miso soup)
7 Cups Sugar
7 Each Eggs (Yolk only)
