What's a movie night without popcorn? And, with that motivation in mind, I wanted to go into this weekend with some fresh ideas on how to jazz up the movie night basic - popcorn.

And all I have to say is wow! Folks out there are really getting creative with mix-ins or toppings to take it from plain to just plain fabulous!
Start with either microwavable popcorn, air-popped or stovetop prepared. However you get it to pop is up to you. Then try one or more of these concoctions to really make it special. Or consider a popcorn bar of sorts where folks top it with their faves.
Here are several of my new favorites. The last one's an absolutely delicious recipe for homemade peanut butter popcorn topping that I take it a step further with chocolate chips on top of that. Really, really good!
S'Mores Miniature marshmallows, M&Ms, Honey Graham cereal and all sprinkled with dry hot cocoa mix.
Asian Rice crackers, wasabi peas mixed in with fresh popcorn. Or, do as I did, and simply buy a premixed cracker blend to add.
Chipotle Lime This one sounds weird but it is fabulous. It would be great with a cold brew, too if you indulge. Fritos corn chips - original Chipotle Red Chili Pepper grinder (found it in the spice aisle at Fry's) Or just sprinkle on dry taco seasoning. Now squeeze a fresh lime wedge over it all. Fantastic!
Twizzler Treat Red Twizzler pieces, Hot Tamales candies all sprinkled with red sugar.
Pizzeria This one sounds a little crazy too but is really good.>br? Pizza flavored goldfish crackers, small pieces of fresh pepperoni and topped with fresh grated Parmesan cheese.
A Classic Mix Dry Roasted Peanuts, mini pretzels, M&Ms.
And now the delicious peanut butter popcorn topping.
1/2 cup light corn syrup 1/2 cup sugar 1/2 cup creamy peanut butter 1 tsp. vanilla flavoring
Over medium high heat, in a saucepan heat the corn syrup and the sugar until it is pretty well dissolved (about 3 minutes or so). Add the peanut butter and heat until blended, stirring constantly - watch it carefully so it won't burn (about 1 -2 minutes). Remove from heat, stir in the vanilla and pour it over popcorn. While still warm, sprinkle with chocolate chips.
This will firm up, so if you have any left - it heats very well in the microwave safe container for about 1 minute.
Who knew that the old snacking standby could become something so different? So, even if the movie is bad the popcorn can be great.
