RECIPE FROM THE IRISH PUB:

SMOKED SALMON

6 Oz SMOKED SALMON

1 Oz CAPERS

1 Oz DILL

2 Oz CHIVE SOUR CREAM

2 Lbs YUKON GOLD POTATOES

To Taste WHITE PEPPER

To Taste SALT

SHEPHERDS PIE

2 Lbs GROUND BEEF

4 Tbsp TOMATO PASTE

Cup DICED ONION

Cup DICED CARROTS

Cup DICED PARSNIPS

To Taste GREEN PEAS

2 Tsp DRIED OREGANO

1 Tsp DRIED THYME

Cup RED WINE

Cup GUINESS DRAUGHT

To Taste SALT

To Taste BLACK PEPPER

MASHED POTATOES

Peel potatoes.

Boil, and mash 1 lb of potato.

Peel and grate the other potato.

In a bowl combine 2 eggs, Potatoes and cup milk.

Season with salt and pepper.

Spoon mixture on to griddle or hot pan with coated with Oil to prevent sticking.

Brown one side, flip and cook through.

In a hot pan, slightly brown ground beef.

Once beef begins To darken, add onion salt, pepper, oregano and thyme.

Cook until onions soften.

Add parsnips, carrots, wine, Guinness and tomato paste.

Simmer on medium heat for 25- 30 min until sauce thickens.

Dish into oven proof Bowls, pipe with mashed potato and brown under the broiler.
