1 Export Rib (13-14 lbs)
½ Cup Prime Rib Spice Rub
1 Salt Crust
Procedure:1. Evenly rub the entire export rib with the spice rub.2. Distribute the salt crust over the top of the export rib evenly, trying to maintain the same thickness across the entire export.3. Place the entire export rib on a roasting rack and place in oven set at 250 degrees, for 2 hours and 45 minutes.*4. After cooking, hold the export rib in the oven at 140 degrees until service.5. Before service clean off the salt crust, and pour clarified butter over the top of the exportrib. After that place under the broiler to achieve a nice seared crust.6. For service serve the prime rib on a "fish plate", with au jus and creamy horseradish on the side.7. When serving offer to pour a littlebit of au jus over the top of the prime rib after being served.
Prime Rib Salt Crust Ingredients: 3 lbs Kosher Salt 4 Egg Whites Water as needed Procedure:1. Place the kosher salt in a mixing bowl.2. Separate the egg whites from the yolks, and place in the bowl with salt.3. Thoroughly mix the egg whites and salt together, while slowly adding water until a uniformed paste is formed.
Prime Rib Spice Rub
1 Cup Ground Black Pepper
1 Cup Granulated Garlic
½ Cup Onion Powder
½ Cup Dried Thyme
½ Cup Dried Basil
3 Tsp Fresh Rosemary (chopped)
Procedure:1. Place all of the ingredients into a mixing bowl.2. Clean the fresh rosemary and then chop it up; place in the bowl with the rest of the ingredients.3. Mix all of the ingredients together thoroughly.
