Lamb chops "scottatiti" (finger burners) with braised artichokes, white runner beans, and lemon thyme vinaigrette

Ingredients:

6 Lamb chops

2t Salt

1t Ground black pepper

5oz Braised beans (canned are fine)

5oz Marinated artichokes (large or small)

1t Minced herbs or freshly chopped parsley

4oz Chopped tomato

Serves: 2

Procedure:

1.Braised beans and marinated artichokes will work perfect for this dish, warm each amount in a pan with the minced herbs, parsley and the chopped tomatoes.

2.Fire up the grill, wood, gas or you could even use the stove at home. Grill pans work great for this recipe.

3.On high heat sear the lamb chops to your desired temperature, mine is medium rare or at 110 degrees, and let it rest while you gather all the other ingredients.

4.After the chops are cooked remove to rest for about 5 minutes while they still retain their heat but don't over cook them.

5.Place the beans and artichokes on plate if family style and place individual lamb chops over top, and then drizzle with the vinaigrette.

6.If you don't have time to make the vinaigrette extra virgin olive oil will go fine.

Lemon Thyme vinaigrette Dressing created by Peter DeRuvo

Yields about 2 cups of dressing

Fresh Lemon and orange juice 4 cups

Roughly chopped shallots 1/4 cup

Red wine vinegar 1 T

Kosher salt 1/2 t

Queen creek extra virgin olive oil 2 cups

Chopped thyme 1 T

In a small sauce pan pot reduce the juice, shallots to 1 cup. Strain through a sieve into a mixing bowl. Add the vinegar, salt and chopped thyme. Using a squeeze bottle for the extra virgin olive oil stream the olive oil while whisking in the reduce juice to emulsify the sauce. Hold at room temperature.
