Salt & Pepper Ribs
2 racks pork ribs 3 lbs each
2 tbs kosher salt
2 tbs cracked black pepper
1 tbs chili powder
3 tbs brown sugar45
6 oz saba
2 oz each of parlsey, rosemary & basil
Mix all dry ingredients together in a mixing bowl & coat both racks of ribs with it.
Place ribs in baking pan, cover with foil & place pan in 250 degree oven for 2 hours.
Pull out of oven & throw on a wood fire grill for 1 hour. (Make sure to lay your ribs around the fire so no flames are hitting them directly to help prevent them from burning).
Rough chop all the herbs & mix together.
After the ribs come off the grill place them on a serving platter, coat them with the Saba using a pastry brush & garnish with the herb salad.
