Tuscan Eggs with Herb Ciabatta Toast

Serves 4


Tuscan Eggs

Eggs- 8

Cream- 1/3 cup

Tomato sauce- 1 cup

Parmesan- 1/2 cup (shredded)

Bacon- 6 strips (chopped & crispy)

Thyme- 1 oz. (chopped)

Chives- 1 oz. (diced)

Dried tomatoes- 1/2 cup (chopped)

Salt & pepper to taste


Herb Crusted Ciabatta

8 slices of ciabatta

Basil- 2 oz.

Chives- 1 oz.

Thyme- 1 oz.

Parmesan- 1/2 cup (shredded)

Olive oil- 1/3 cup


1. To prepare the Tuscan Eggs, in a medium bowl mix cream, tomato sauce, and parmesan. Pour the sauce into bottom of 4 baking dishes. Garnish with crispy bacon, dried tomatoes, and herbs.

2. Preheat the oven to 350 degrees, bake the eggs for 15 minutes or until the egg whites are cooked through.

3. To prepare the herb-crusted ciabatta, add herbs, parmesan and olive oil into a Cuisinart and puree until the mixture has turned into a paste.

4. Slice the ciabatta, coat with the herb paste and bake at 350 degrees for 5 minutes.
