In Japan, during the period of strong Buddhist influence, the eating of meat was prohibited.
The few people who recognized the nutritional value of meat, were compelled to eat it
secretly. At that time it was commonly broiled on a farming tool called SUKI (spade). Hence
the name SUKIYAKI. It is probably one of the most internationally known Japanese dishes today.
Kyu Sakamoto sang the song "Sukiyaki" which became number one on the Billboard hot 100 in the
US and sold 13 million copies. :)
1 1/2 lbs. beef tenderloin
2 cups napa cut
1 lb. green onion
2 oz. shirataki (noodles)
1 piece broiled tofu
1 tsp. oil
1/3 cup plus 1 tbsp. mirin
1/3 cup plus 1 tbsp. soy sauce
1/3 cup plus 1 tbsp. broth
5 tbsp. sugar
1. Cut beef into thin slices. Cut green onions on the bias and napa into three equal parts. Wash and boil noodles. Drain and cut. Cut broiled tofu in 8 pieces.
2. Make mixture A and set aside.
3. Arrange meat attractively on a large plate, placing a few pieces of sliced beef in the center like a rose bud.
Arrange vegetables on another plate.
4. Preheat skillet, add oil and rub over the bottom and sides to grease. Add beef and vegetables little by
little and cook briskly, pouring mixtures A over a little at a time.
5. Just before eating, dip meat and vegetables in beaten raw egg in small individual bowls.
Note: In order to maintain the delicate flavor, do not cook beef and vegetables all at once. More varieties of
vegetables can be added if so desired.
