3 cups of 3/4” cubed seedless watermelon
3/4 cup of 1/2” cubes of organic feta
1 cup of 3/4" cubed European seedless cucumber
1/4 cup pitted, quartered, Kalamata olives
1/2 cup packed baby or micro arugula
8 small basil leaves
8 small mint leaves
8 leaves of Italian flat leaf parsley
1-2 T fresh lime juice to taste
2-3 T extra virgin olive oil
Salt to taste
1. Combine all ingredients and season with salt to taste.
