Dough recipe
This is simple as simple can be
Ingredients:
2.5 Lbs Flour- High protien
1.00 liter tap water
1 teaspoon dry yeast
1 tablespoon kosher salt
 
Method-
Place yeast in 1/4 cup warm water (100 to 110 degrees) stir, wait five minutes and allow yeast to foam
Hand mix the flour and salt
Place the yeast mixture in the flour and salt mixture and hand mix for 30 seconds
Slowly add water and mix by hand for 5 minutes
Cover and let dough sit for 10 minutes (autoclypse)
Mix dough by hand for 5 more minutes
Place in bag and store in refrigerator for 72 hrs
 
To make pizza-
Weigh out 10 oz dough balls- roll dough into balls ,place a small amount of flour on a plate and place dough ball on floured plate- cover dough with fine layer of four then plastic wrap- should make 7 pizzas- use the same day - let dough come to room temp before rolling out to 12 inches
Pre -heat pizza stone in oven at max temp
hand stretch dough and top with exotic topping- cook for 5 to 7 minutes or untill desired - have fun- make a mess
