We all eat more sweets around the holidays and although most of us like to bake cookies, it seems like the Holidays are “high time” for cookie baking.  I want to share with you a healthy cookie to make at home.  This recipe came directly from Make it Paleo by Dill Staley and Hayley Mason. 

Paleolithic means “ancient or primitive” and to me it means “before processing”.  People choose Paleolithic foods because they want to improve their health – like lose weight or have more energy or treat any health condition.  Processed foods contribute significantly to declining health of all ages. 

In this recipe the base is Almond Flour. Almonds are naturally gluten free, have protein, good oils and fiber that is not found in typical flour.  I purchase mine in bulk on line from a store called Honeyvillegrain.com.  I like to freeze this flour as it has oils and no preservatives.  The dark spots you’ll find in this “flour” is natural to the almond skin.  Coconut oil is the fat that is used and it is a really healthy choice. It heats well, metabolizes well and creates a sweeter taste.  I sometimes adjust the fat to be either Ghee or organic Butter simply because of my blood type.  When I use butter instead, or use half coconut oil and half butter I add a sweetener to make up for the sweetness lost from the coconut oil.  The sweetener is called erythritol.  It has zero calories, comes from nature and tastes twice as sweet as sugar.  If you cannot eat eggs you can use the egg replacer.  You can purchase commercial ones or make your own.  This website has many options for egg replacement http://chefinyou.com/egg-substitutes-cooking/

If you choose to give a tasty treat as a gift, go one step further and give the recipe so your friends/family can appreciate sweet treats without overburdening their bodies.  This recipe is double the original, making about 50 cookies.  We make them all up and put in the freezer.  If you use the mini chocolate chips you can eat right from the freezer! If the chips are larger they can be hard on the teeth.  You can freeze the dough in 3-inch rolls and slice and bake fresh when ready. There are no preservatives in this recipe so it needs to stay frozen.

Chocolate Chip Cookies, The Healthy Kind
Ingredients
• 6 cups blanched almond flour
• 2 tsp baking soda
• 2 tsp Real salt or Sea Salt
• 4 eggs
• 1 c pure maple syrup
• 2 tsp vanilla extract
• 1 c coconut oil or ghee or organic butter
• 1 bag of chocolate chips of your choice
• If using butter, add 6 T erythritol for sweetener

Preparation
• Sift the flour with baking soda and salt.
• Add in the rest of the ingredients except chocolate chips.
• Blend together with hand mixer until blended well.
• Add the chocolate chips and mix well.
• Drop balls of cookie dough 1 tablespoon apart.
• Bake at 375 degrees for 12 minutes.
