Yield: 6 servings
1-1/4 cups Greek style yogurt
1 each Lime, juice and zest
2 Tbsp Mint, roughly chopped
1 Tbsp Basil, roughly chopped
2 tsp Fresh ginger, finely chopped
½ tsp Ancho chile powder
To taste Kosher salt and freshly ground black pepper
1-1/2 lbs Cherries
2 each Mangos, peeled, pitted and cut in chunks
2-3 cups Tender baby greens
1 tsp Olive oil
1. Combine the yogurt, lime juice and zest, mint, basil, ginger, and chile powder to the drained yogurt; mix well. Season to taste with salt & pepper and set aside.
2. Place the greens in a large mixing bowl. Toss with a few drops of olive oil and a few grains of salt; arrange on a serving platter. Arrange the fruit over the greens and top with the yogurt dressing.
• The fruit can be tossed with the yogurt dressing if desired.
