Marinated Chicken Tacos

2 lbs boneless organic chicken thighs

marinade:
1/4 c lime juice
2 cups olive oil
2 tsp coriander
1/2 tsp clove
2 tsp salt
1/2 cup orange juice
1 tsp granulated garlic
2 tsp guajillo powder
Whisk all above together & marinate chicken 1 hour.
Grill chicken over medium coals until cooked thru.

Garnish with:
1 cup spicy mayo*
1/2 lb crumbled bacon
shredded lettuce
sliced avocados
diced tomato
chopped fresh cilantro
pickled red onions*
Makes about 10 tacos

Shrimp Adobo Tacos

1 lb Laughing Bird Organic Shrimp

marinade:
6 garlic cloves, toasted
3 ancho chiles, cleaned and stemmed
2 cups orange juice
half of a 3-inch stick of Mexican cinnamon
1 tsp fresh ground pepper
1 tsp cumin
1 Tbsp Mexican oregano
1 bay leaf
dash ground clove
1 Tbsp cider vinegar
1 Tbsp brown sugar
2 tsp salt
simmer & blend & reserve in refrigerator. can make up to 5 days in advance.

In a skillet over high heat filmed with oil, sear the shrimp on one side then add enough adobo to coat and continue cooking until shrimp are firm. Turn off heat and remove from pan to stop further cooking. Transfer shrimp to a bowl or mound onto soft corn tortillas.   Garnish with spicy cabbage* & lime crema*.  Makes about 10 tacos

Lime Crema

1 cup sour cream
zest of 1 Lime
1 Tblsp Lime juice
dash Salt
Stir to blend.

Spicy Cabbage

1-1/2 cups shredded cabbage
1/2 Tbsp Cholula brand hot sauce
1/2 tsp fresh ground pepper
1/2 tsp kosher salt
1-1/2 Tbsp cider vinegar
1/2 Tbsp olive oil
1/4 tsp sugar
Mix it all up. Refrigerate the extra for later uses.


Spicy Mayo

1 cup Best Foods mayonaise
1 Tbsp Cholula
1/4 tsp granulated garlic
1 tsp kosher salt
1 tsp black pepper
1 tsp Sugar
2 Tbsp fresh Lime Juice
Stir to blend.

Pickled Red Onions
1 red onion, thinly sliced into rings
1-1/2 tsp kosher salt
1/2 tsp fresh ground pepper
1 Tbsp cider vinegar
2 tsp olive oil
2 tsp Mexican oregano
Toss the ingredients together 30 minutes before serving. Refrigerate the extra for later us
