I was doing some spring-cleaning the other day and got to the cereal shelf in my pantry…and roughly 5 boxes of half-eaten cereal. As I pulled them out, I started thinking about other ways to creatively use breakfast cereal – at least beyond my favorite nighttime snack of a bowl of cereal before bed.
Along with some of the simpler ideas that I unearthed, I a great recipe for oven baked chicken that really tastes great; and a how-to for a frozen banana treat, perfect for summer.
Best Oven-Fried Chicken
This is one of the best recipes I’ve found for oven-fried chicken using Corn Flakes – and there are a lot of them! This one is found in the cookbook, Eat What You Love by Marlene Koch. As she summarizes it, “it was the exact combination of spices (black pepper is key), breading (the winner is a blend of finely crushed cornflakes and breadcrumbs), and cooking method (using a wire rack).
Trust me on this – don’t skip a step – and this recipe will be one of your keepers!

Best Oven-Fried Chicken
Eat What You Love, by Marlene Koch
2 large egg whites
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
½ teaspoon ground sage
¼ teaspoon dried thyme
1-¼ cup plain breadcrumbs
½ teaspoon black pepper
½ teaspoons salt
2 tablespoons all-purpose flour
1 ½ pounds chicken pieces – skinned
Preheat the oven to 400 degrees F. Place a wire rack on top of a baking sheet and spray with cooking spray.
In a shallow bowl, whisk together the egg whites with the garlic powder, onion powder, cayenne pepper, sage and thyme.
Place the cereal in a plastic bag and crush thoroughly with a rolling pin. Place in a shallow bowl and mix together with the breadcrumbs, pepper and salt.
Place the flour in a third shallow bowl.
To bread the chicken pieces, first dredge the chicken in the flour to coat. Next, dip each piece of chicken into the egg white mixture, followed by the crumb mixture, making sure to cover all surfaces. Repeat until all the chicken is coated.
Place the chicken pieces on the prepared rack and bake for 45 minutes, or until the chicken is golden brown and registers 180 degrees F. when tested with a meat thermometer in the thickest part.

Frozen Cereal Banana Pops
These are so easy and can be made with any of your favorite cereals:
Any container of yogurt
Favorite breakfast cereal
Skewers, lollipop sticks or even straws
Peel and cut bananas in half. Put each half on stick. Using a spoon, spread on yogurt to cover entire banana half. Then, simply roll in your favorite cereal and place on a plate in the freezer. Within an hour or so, you’ll have a tasty frozen treat!
