Refreshing Garbanzo Bean Salad
Submitted by Aarthi, age 11, Chandler
1 can garbanzo beans, drained and rinsed
1 carrot, grated
1 small onion, chopped
1 cucumber, chopped
1 small firm mango, chopped
1 teaspoon cilantro, chopped
1/4 cup small pineapple cubes – optional
3 teaspoons fresh lime juice
1/2 teaspoon salt
1/2 teaspoon pepper

The garbanzo beans are best if chilled. Mix the cut vegetables and fruits (carrot, onion, cucumber, mango and pineapple if using) with chilled garbanzo beans. Add lime juice, salt, pepper and cilantro. Toss well and serve.
