Shrimp Ceviche

2 pounds Shrimp, cleaned and deveined
2 red onions, finely diced
2 cups fresh lime juice
8 tomatoes, cut in small dice
2 T garlic, minced
1 bunch cilantro, chopped
5 each jalapeno peppers (or to taste) chopped – seeds discarded
Salt and pepper to taste


1. Combine shrimp, onion, and lime juice in large bowl.  Cover, refrigerate, and let marinate for 12 hours.
2. After 12 hours, combine marinated shrimp and onion with remaining ingredients. 
3. Season to taste with salt and pepper.
