Salsa Verde
 
Ingredients:
3 tomatillo grilled
Juice of 1 lime
3 cloves roasted garlic
2 jalapeno peppers grilled
2 avocado diced
1/2 cup shredded jack cheese
Salt and pepper to taste

Instructions:
Place tomatillo, lime juice, garlic cloves and jalapeno in a blender and blend well
Place in a dish and fold in fresh avocado along with cheese
Salt and pepper to taste 
 
Fire Roasted Tomato Salsa
 
Ingredients:
3 tomatoes grilled
8 roasted garlic cloves
2 anaheim chili roasted
1/4 cup cilantro
Salt and pepper to taste 
 
Instructions:
Dice tomatoes, garlic cloves and Anaheim pepper (large rustic dice)
Add cilantro along with salt and pepper to taste
 
Serves: Six
