Salmon and Asparagus with Yellow Curry Sauce

Ingredients:
5oz. salmon
3oz. mashed potatoes
4ea. asparagus
1 tbsp. yellow curry paste
1 cup heavy cream
fried leeks
 
Instructions:
Heat saute pan with oil. Cook salmon to desired temperature.
Heat another saute pan with butter and saute the asparagus with a little soy and garlic.
Plate mashed potatoes in the center then place asparagus and salmon.
Heat another saute pan and add in heavy cream with yellow curry paste and dissolve curry paste.
Bring to a boil and then remove from heat.
Pour gently over salmon and garnish with the fried leeks.
