Onion Encrusted Salmon

Onion Crust
1 red onion (sliced)
1 yellow onion (sliced)
1 TBLS. Olive Oil
2 Cloves garlic
1 tbls. Apricot preserve

Procedure
1. Sauté the onions in a pan until golden brown. Add the Garlic, Apricot and simmer for 10 minutes.
2. Remove from the pan and set aside.

Salmon
4-6oz. Salmon Filets
Salt and pepper to taste

Procedure
1. Season salmon with salt and pepper.
2. Pan sear on both sides for 2 minutes.
3. Top with the onions and bake for 5 minutes @400 degrees.
4. Serve over potato pancake and top with apple relish.

Apple relish
1 red apple (chopped)
1 green apples (chopped)
1 Tbls. chopped mint
1 Tsp. Olive oil
Juice from 1 lime
1 tsp brown sugar
1 tsp. adobo sauce
Salt and pepper

Procedure
1.Combine all of the above in a bowl and mix well.

Ingredients:
Potato Pancake:
3 Idaho Potatoes (shredded)
½ Yellow onion (shredded)
½ cup Matzo Meal
1 Tbls. Chopped Parsley
2 tsp. Granulated Garlic
½ cup Shredded Cheddar
3 eggs
Salt and pepper to taste

Procedure
1. Combine all of the above in a bowl and mix well.
2. Place 2 tsp. of olive oil in a pan and place ½ cup of mixture in the pan.
3. Cook until golden brown.
4. Place pancake in the middle of the plate. Top with the salmon; top the salmon with the relish.
