Grilled salmon salad with a lemon, sumac dressing

Salmon
(4) 6oz. salmon filets
1 Tbsp. olive oil
1 tsp. sumac
Salt and pepper to taste

Instructions:
Combine all of the above in a bowl and mix well.
Spray the grill with a non- stick coating and place the salmon on the grill.
Grill for four minutes on each side and top the salad and serve.

Salad
2 heads of romaine greens (chopped)
3 tomatoes (chopped)
1 cucumber (chopped)
1 cup sliced radish
1-cup hearts of palm
1 cup artichoke heart (chopped)
1 cup roasted red peppers
½ cup chopped parsley
½ cup chopped mint
Juice from two Lemons
3 Tbsp. olive oil
2 Tbsp. sumac
Salt and pepper to taste

Instructions:
Combine all of the above in a bowl and mix well.
Top the salad with the salmon and serve.
