Grilled Chicken Caponata

Chicken Breast Ingredients
4- 6oz. boneless chicken breast
1 Tbsp. olive oil
1 tsp. fresh garlic
1 tsp. fresh thyme
1 lemon ( juiced)
Salt and pepper to taste

Chicken Breast Instructions:
Marinate the chicken for 2 hours.
Season with salt and pepper to taste.
Grill until fully cooked.

Caponata Ingredients:
1 eggplant (sliced)
1 yellow squash (sliced)
1 green zucchini (sliced)
2 tomato (cut in half)
1 red onion (sliced)
2 red peppers (sliced)
1 Tbsp. olive oil
1 Tbsp. basil (chopped)
Salt and pepper to taste

Combine all of the above in a bowl and mix well.
Grill until fully cooked and remove from the grill.
Chop all the veggies and mix well.
Serve under the chicken breast.
