Grilled Cheese and Prosciutto, Roasted Tomato Soup

Grilled Cheese Ingredients:
8 thick Slices of bread
8 slices of jalapeno cheese
8 slices of mozzarella cheese
16 slices of prosciutto
2 cups arugula
Salt and pepper to taste
1 Tbsp. butter

Grilled Cheese Instructions:   
Butter the bread on one side. Place the bread on a low temperature grill.
Place cheese on both side of bread along with prosciutto.
Cover the grill.
Remove from the grill. Top with the arugula and serve.


Tomato Soup Ingredients:
4 ripe tomatoes
1 small red onion
6 basil leaves
1 cup chicken soup
1 tsp. granulated garlic
Salt and pepper to taste

Tomato Soup Instructions:
Place the onion, tomato on the grill and roast for 15 minutes.
Remove from the grill and put into a blender. Add stock, garlic, basil, salt and pepper. Blend until smooth.
Serve with the grilled cheese.
