Green Chile Pork

5 lbs pork
salt & pepper
1 quart water

1 cup chopped onion
1-1/2 tsp Coriander
3/4 tsp Cumin
2 Tbsp Oregano
2 Tbsp Bay leaves
1/2 cup Green Chile powder
1-1/2 tsp salt
3/4 tsp sugar
3/4 tsp granulated Garlic
1/4 cup Maseca
1/4 cup flour
3 cups roasted Chiles (Poblano or Green)
1 quart water

Cut pork into 2” cubes, season with salt & pepper.
Sear on flat top until well browned.
Put in pot with 1 quart water. Simmer 1 hour.

Meanwhile, puree remaining ingredients with 1 quart water, add to pot, simmer until tender, about 1 hour more.
