Gluten Free Pancakes

2 1/3 c. gluten free all-purpose flour
2 tbs. sugar
2 tsp. baking powder
1/2 tsp. Real Salt
1/2 tsp. xanthan gum
1 1/2 c. milk or dairy alternative
3 tbs. coconut oil
2 eggs, beaten
1/2 tsp. gluten free vanilla, almond or maple extract

Combine dry ingredients in a bowl. In another bowl, combine wet ingredients. Slowly mix wet ingredients into dry and mix until mixed together well. Not more than one minute. Pour 1/4 c. scoops onto a heated, greased griddle. Cook until bubbles start forming in batter then flip. Cook one to two more minutes on that side then remove from griddle when they are cooked through. Enjoy!
