Eggs in Purgatory

Ingredients:
1 lb Ripe tomatoes
2 TB Slice garlic
1/4 cup Diced onion
2-3 each Sliced Hot peppers
2 sprigs Thyme
2 sprigs Parsley
Olive oil as needed
Salt and Pepper, to taste
4ea Farm Fresh Eggs
1 piece Reggiano Parmigiano

Instructions:
Cut the tomatoes in to quarters.
Toss Tomatoes, Garlic, hot peppers, and herbs with enough olive oil to lightly coat.
Season the mixture with salt and pepper and place in a small baking dish.
Bake @ 350 degrees for approximately 20 minutes.
Remove dish from oven.
Crack eggs into dish, lightly season with salt and pepper and return to the oven for 5-7 minutes until eggs  are cooked to your liking.
Remove from oven and shave Parmigiano over the top.
Enjoy with toasted country bread.
