Eddie’s Pesto Lamb Chops

1 ½ Bunches of parsley
 ¼ lb of basil
1/6 cup of garlic
¼ cup of shallots
1 cup of lemon juice
½ cup Parmesan Cheese
1 ½ qt olive oil
1/8 cup of salt
1 table spoons black pepper
16-Baby Lamb Chops

Blend all ingredients except Lamb Chops in a blender

Marinate Lamb Chops for a minimum of 2 hours

Grill to desired Tempature

Watermelon Arugula Salad

8-Ounces Arugula
3-Cups Watermelon-Cubed
½-cup Red Onion-Shaved
¼-Cup Anchovy-Diced
½ Cup-Fresh Mint-Chopped
2-Lemons-Juice Only
¼-Cup Radish-Sliced
2-Tomatoes-Cut & Quartered
½-Cup Toasted Sunflower Seeds
Salt & Pepper to Taste

Mix above items together in large bowl –Serves 4
