6 cups arugula
6 ounces cooked salmon, shred into pieces with a fork
¼ cupped toasted corn
¼ cup dried cranberries
1/8 cup sunflower seeds
¼ cup crumbled feta
¼ cup red pepper, diced
¼ cup Israeli cous cous
¼ cup ranch dressing
1 tablespoon pesto
Combine all ingredients in a bowl, except for the ranch and pesto. Mix ranch and pesto together in a separate bowl. Add to salad and mix to combine. Place equal amounts on two plates and sercve.
