Chicken Pesole with Avocado Relish

Ingredients: Chicken Pesole
4-cloves garlic-chopped
1-onion-Chopped
2-Bay Leaves
1-tsp crushed red chilies
1-Tbsp. pasilla pepper
2-tsp. cumin
1-whole chicken boned & cubed
3-cups hominy
2-quarts chicken stock

Procedure for Pesole:
Sauté onion, garlic, bay leaves, red chilies, pasilla pepper and cumin, after several minutes’ ass, chicken, hominy, chicken stock, and let simmer for 30 minutes.
 

Ingredients: Avocado Relish
2-avocados peeled cut chunky
½ -red onion-diced
dash Worcestershire
2-tsp. granulated garlic
1-lemon-juice only
3-Tbsp. cilantro-chopped

Procedure for Avocado Relish:
Mix, all relish ingredients together, and garnish on top of pesoule
