Chicken Chorizo & Steamed Kale

Ingredients:

12-Ounces Chicken –Cubed
1-Tablespoon Olive Oil
4-Cloves Garlic –Chopped
2-Shallotts-Chopped
1-Tabelspoon Cumin
2-Teaspoons Crushed Red Chilies
2-Teaspoons Paprika
1-Pinch Cayenne Pepper
2-Bunches Kale
½ Cup -Fresh Pineapple-Cubed
¼ Cup-Cilantro
½ Cup-Sprite
4-Ounces Chicken Stock

Procedure:
Heat oil in a medium size skillet, add chicken, garlic, shallots, cumin, red chili, paprika and cayenne pepper, brown chicken evenly, add chicken stock cover and let simmer for 15 minutes.  Remove from heat and let stand for 5 minutes.

In a separate pan, steam Kale, pineapple & cilantro, using the sprite as your liquid.  Serve chicken on top of steamed kale.
