Bacon, Olive and Cheese Flatbread
Makes 24 two-inch pieces
Ingredients
½ cup chopped green onions
½ cup chopped Kalamata olives
6 pieces of bacon, cooked and crumbled
1-1/2 cups shredded sharp cheddar cheese
½ cup mayonnaise
½ teaspoon curry powder
¼ teaspoon salt
1 piece (about 8-x12-inch) of lavosh or other flatbread
2 tablespoons chopped chives
Procedure
In the bowl of a food processor, pulse together the green onions and olives. Add bacon, cheese, mayonnaise, curry powder and salt. Pulse until combined. Use immediately or refrigerate for up to 2 days.
Preheat broiler. Put the lavosh on a baking sheet and toast it on one side. Turn over and spread the bacon mixture over the untoasted surface. Put back under the broiler and cook until browned and bubbly, 2 to 3 minutes. Sprinkle with chopped chives and cut into squares. Serve immediately.
