Grilled stuffed Anaheim chili with bacon

 
2 large fire roasted Anaheim chilies cut in half
1 cup cube diced cheddar cheese
1/4 cup diced cooked bacon
 
 
Cooking instructions
 
Cook 1/2 lb. of bacon and dice in to small pieces
Dice 1 lb.  Cheddar cheese
Cut 2 Anaheim chilies in half and stuff with cheese and bacon
Cook on top part of grill on medium until chilies are soft and cheese is melted

 

Spicy grilled chicken quesadilla
 
2 large flour tortillas
1 cup shredded spicy jack cheese
2 grilled chicken breasts sliced thin
2 fire roasted green chili thinly sliced
1 jalapeño diced
 
Cooking instructions
 
Grill and fully cook two chicken breasts and two green chilies and cool
Once chicken and green chilies are cooled slice in to thin pieces
Shred 1/2 lb. of spicy jack cheese
Dice one jalapeno
Spray the top rack of your grill with a non-stick spray and place flour tortillas on top over medium heat
Cover each half with cheese and the rest your ingredients and fold the other half over
Once cheese is starting to melt flip over and cook the other side.

 

Three cheese Tailgate dip
 
1/2 lb. spicy jack cheese
1/2 lb. cheddar cheese
1/2 lb. white cheddar cheese
1/2 cup diced fresh plum tomato
1/4 cup diced jalapeños
1/4 cup diced green chili
1/4 cup diced onions
 
Cooking instructions
 
Cut all cheeses in to 1/2 in. cubes
Small dice all other ingredients
In an oven safe container of a small crockpot place all ingredients in except for the green onions and cook at 350 or on the top rack of your grill at medium-high heat until cheese is melted
Once cheese is melted remove from heat and garnish with green onions and serve with your favorite bag of chips
