While Sojourner Center receives donation of clothes and other clothing items for the women and children of abuse, receiving donation of undergarments is another story. That's where Fresh Foundations comes in! Fresh Foundations rallies the community together to donate packages of new underwear, bras, socks and undershirts. These vital garments are donated to the Sojourner Center clothes closet and distributed to the nearly 3,000 women and children they serve annually. Please support the women and children at the Sojourner Center by attending our 3rd Annual "Panty Party" A High Tea at the Ritz-Carlton, Phoenix, August 22, at noon. $50 per person and bring a package of undergarments for a child or a woman. Whole Roasted Chicken
1 4lb free range chicken
8 ea thyme, rosemary, oregano sprigs
1 ea lemon slices ¼ inch
To taste salt and pepper
2 T olive oil
Stuff herbs under the skin, inside the cavity of the bird and add the lemon slices to the inside of the bird as well. Let sit overnight if possible. When roasted the bird, pull it out of the fridge and preheat the oven to 425 convection 450 nonconvection. Place bird on a sheet pan lined with parchment paper, herbs placed on parchment and a rack placed on top of herbs. Place bird on the rack and brush with olive oil and dress with salt and pepper. Roast at 425/450 for 20 min (DO NO OPEN THE DOOR) and reduce heat to 350/375 for another 35 minutes. Pull out of the oven and let rest for at least 20 minutes. Use the carcass for stock for soup for the next day.
1 ea bibb lettuce, leaves only
1 ea red, green, yellow bell peppers julienned
1 ea red onion, julienned
1 ea garlic clove minced
3 ea shallots, minced
4 T olive oil
1 cup white wine
1 T red wine vinegar
6 oz shredded beautiful roasted chicken
To taste crème fraiche (8:1 heavy cream:buttermilk room temp 48 hours covered)
To taste cilantro, chopped
To taste lime juice
Slowly cook peppers, red onion, shallots, garlic in olive oil for 3 minutes stirring constantly, add white wine and cook until tender. You are making Pepperonata here so take your time and use it on your mozzarella next time. Wink wink nudge nudge. When tender add vinegar and allow to cool in its own juice.
Let Us Make Raps
In a hot sauté pan crisp pulled chicken, add pepperonata and deglaze with the beautiful chicken stock that you made the day before. Add chilis if you want to make a bit spicy. Open up the Bibb lettuce and garnish with the crème fraiche and cilantro. I go with sliced serranos, chopped red onion and lime juice.
Peanut Butter Banana & Jelly
.5 lb roasted salted or unsalted peanuts
4-6 oz ripe bananas
2-4 oz peanut oil or Tahini to blend more may be needed to blend
Optional local honey
Start with the peanuts in a food processor and pulse until you can see the oils come up the sides. Once you see the "legs" like a fine wine come down the sides of the processor start to "rain" in the oil or tahini. I prefer tahini for the health qualities of sesame seeds. Add the ripe or overly ripe banana depending on taste to the blend. Let puree until homogenized. Season with honey or salt if needed. No Karo syrup, bleached sugar, "animal products," may contain up to 100% honesty so be careful my friends
