NATIONAL WAFFLE DAY
From caramel apple French toast to Chef Nicholas Schaus' signature "Cinnamon Roll Pork Chop," brunch at Twisted Rose is putting fresh and new twists on classic brunch favorites. Enjoy dishes such as eggs Benedict with rosemary apple hollandaise sauce, omelette bites with fingerling potatoes, passion fruit chicken piccata or a build-your-own breakfast featuring many classic items like bacon, sausage, hash browns and potatoes. Entrees change weekly and prices range from $8 and up.

The brunch menu at Twisted Rose has hot dishes and cool prices. Paired with a classic mimosa or bloody mary, it's Scottsdale's newest winery, eatery and brunch spot on Sundays.

RECIPE: CARAMEL APPLE WAFFLES
For waffles
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups well-shaken buttermilk
3/4 stick (6 tablespoons) unsalted butter, melted and cooled to room temperature
2 large eggs
nonstick spray for waffle iron

For topping
2 tablespoons cinnamon
*1 cup packed brown sugar
*1 cup caramel sauce
2 cups peeled, cored, quartered apples
1 1/4 cups pure maple syrup

Special equipment: a waffle iron (preferably Belgian-style)/ waffle maker
Accompaniment: mascarpone cheese


Preparation

Make waffles:

Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.

Whisk together buttermilk, melted butter, and eggs in another bowl, then whisk into flour mixture until just combined.

Spray hot waffle maker with non stick spray and pour a slightly rounded 1/2 cup of batter into each waffle mold. Cook waffles according to manufacturer's instructions until golden and cooked through, about 3 minutes. Transfer as cooked to rack in oven to keep warm, keeping waffles in 1 layer to stay crisp. Make more waffles in same manner.

Make topping:
Heat a 12-inch heavy skillet over moderately high heat combine the maple syrup, caramel sauce, brown sugar, cinnamon, caramel sauce cook until thickened and apples are tender.  Remove from heat and hold for service


Spread mascarpone cheese and ladle your apple mixture over the top before serving. dust with cinnamon or powdered sugar
