Smothered Chicken - by Chef Kia Eaddy of Soul to Soul Cafe!
Ingredients
4 chicken Breast
3 tablespoons of soul seasoning
1 cup all-purpose flour
1/2 cup vegetable oil
2 cups sliced onions
2 tablespoons chopped garlic
2 cups chicken stock
2 tablespoons chopped parsley
 
Directions
Season the chicken generously with 3 tablespoons of soul seasoning Heat the 1/2 cup of oil in a large skillet over medium high heat Brown the chicken, cooking for about 4 minutes on each side Reserve the chicken on a plate Reduce the heat to medium add the onions, garlic and bell pepper to the hot oil and cook for 5 minutes, stirring occasionally to  prevent sticking. Add the flour and whisk until flour is absorbed into oil add chicken stock whisk until smooth and bring to a simmer. Add chicken to the pan and cover. Simmer gently for 30 minutes or until the chicken begins to pull away from the bone. Place chicken is a serving dish sprinkle with chopped parsley and serve
