Chicken Liver Pate
James Porter, Chef

Makes 12 Servings

2 lb chicken livers, well trimmed
2 medium sweet onions, diced
4 garlic cloves, smashed and peeled
2 bay leaves
1 teaspoon thyme leaves
1 and 1/2 cups water
3 to 4 sticks unsalted butter, at room temperature
4 teaspoons Cognac
1 teaspoon allspice
pinch of clove
Freshly ground white pepper & Kosher salt (about a teaspoon each)

In a large sauté pan combine the chicken livers, onion, garlic, bay leaf, thyme, salt, pepper. Add the water and bring to a simmer. Immediately reduce the heat to low and cover. Cook for 3 minutes, until livers are barely pink inside, being careful not to over cook.  Remove from the heat and rest for 5 minutes.

Remove bay leaves. Using a slotted spoon to remove as much water as possible, add cooked mixture to a food processor, and puree until coarse. With the machine on, add the butter, a little at a time, until incorporated. Test consistency at 3 sticks, and add more until the mixture is creamy. Add the Cognac, allspice, ground clove and season with salt and pepper and process until completely smooth.

Line a loaf pan with plastic wrap, leaving plenty for edges to be folded over. Fold the plastic wrap over the pate making sure it's "air tight". Refrigerate overnight.

To serve, remove wrapped pate from loaf pan and carefully take off plastic wrap. Place on long plate and slice. Garnish cornichons, mustard and grilled baguette.

Swim lessons are an essential part of childhood. "Lessons for Life" is Aqua-Tots Swim School's guiding philosophy. At Aqua-Tots Swimming Schools, children learn the importance of water safety and are encouraged to have a life-long love for swimming. Since 1991, Aqua-Tots has been an industry leader in swimming instruction; our nationally recognized LFL program has taught thousands of children to swim. Through our service as an active board member of the United States Swim School Association, along with our local and regional drowning prevention programs, Aqua-Tots Swimming Schools is dedicated in making a difference in the lives of children and their families.

Over 50 years of instructional experience has been used to design the most comprehensive swim training curriculum. Thousands of children have learned to swim and advanced their skills through the Aqua-Tots curriculum. Each of our instructors must have 2 years of teaching expertise before they are eligible for a position with Aqua-Tots. Instructors go through 32 hours of our "Lessons for Life" training and must pass the rigorous Aqua-Tots WSI instructor exam.
Aqua-Tots specializes in small group instruction (4:1 ratio), in-home private and semi-private lessons and pool parties. Aqua-Tots offers swim classes for babies, toddlers, infants, kids, swim team, adults, and children with special needs at locations worldwide. With never more than 4 students per swim class, this intimate setting provides a great environment for children learning to swim. Each of the swim levels (Aqua-Tots Levels 1 through 8 www.aqua-tots.com/swim-levels) have been designed, tested and kid approved to make the difference that counts.  All kid swim levels have 25-28 swimming skills that must be achieved by the student before moving up to the next swim level.  Every swimmer that completes a swim level graduates with a ribbon and swim certificate (a keepsake item for parents and grand parents alike). 
We also offer private and semi-private swimming instruction for families who want the one-on-one focus to excel their children's swimming skills rapidly. These 30-minute private swim classes allow swim instructors to design and mold the swimming class skills around the pace of the student, while challenging their students and motivating them to new levels of swimming.
Our goal at Aqua-Tots Swim Schools is to teach the individual skills of swimming that will produce a competent swimmer in all strokes. Our program allows students to continue building his or her abilities with consistent reinforcement and repetition.
