Chef Sean Kavanaugh of Centerplate's competition recipe for "Sweet and Smokey Arizona Hot Wings"
Chef Sean's Sweet and Spicy Arizona Hot Wings
Ingredients:
3 Dozen Chicken Wings, natural and salt-free if possible
1 cup Frank's Original Hot Sauce
1/4 cup Honey
1/2 Tbsp Chipotle chilies in adobo
2 Tbsp whole butter
Method:
Heat hot sauce, chipotles, and honey in a saucepan until just simmering.
In another pan, melt the butter and set aside without allowing it to congeal.
Puree the chipotles into sauce with an immersion blender (or puree before you add them if you do not have access to a hand-held blender).
Remove from heat and whip in the butter.
Allow flavors to set and enjoy with napkins!
