BBQ Pork Tacos
Ingredients Unit of Measure
BBQ Braised Pork portioned 5 oz. strip or large chunks, 3 ea.
BBQ Sauce 1 oz.
Tortillas of your choice 3 ea., small
Sour Cream 1 oz.
Fresh Cilantro for garnish
Roasted Corn Slaw
Diced Cabbage 1/2 cup
Roasted Corn Kernels 1 cup
Pico de Gallo 1/2 cup
Lime Vinaigrette .5 oz.
**Combine all in bowl and mix together, set aside**
Procedures:
1. Season pork evenly with salt and house seasoning, heat on grill or on grill pan.
2. Combine pork and BBQ sauce in bowl, mix with tongs or fork break up meat
3. Warm the tortilla of choice, top with 1 tsp. sour cream on each tortilla then place pork on tortilla
4. Add Roasted Corn Slaw to tacos, approximately 1oz per taco
5. Garnish with cheese and choice of cilantro
