Good Morning! Arizona Saturday: Grilled filet skewers with mango avocado relish

GRILLED FILET SKEWERS WITH MANGO AVOCADO RELISH
In a soy sesame glaze with crisp lettuce

INGREDIENTS:
(For filet skewers)
4, 4 oz pieces of Filet Mignon or Other Steak
1 tablespoon of blackening spice
Ground black pepper to taste
Salt to taste
1 tablespoon of olive oil
4 each bamboo skewers, soaked overnight

(For mango avocado relish)
1 each mango diced
2 each avocado, diced
½ each red onion, diced
1 each tomato, diced
1 tablespoon of extra virgin olive oil
1 each lime, zest and juice
1 bunch of cilantro, chopped
Salt and pepper to taste
¼ cup of macadamia nuts, toasted
1 head of butter or iceberg lettuce

METHOD:
(For filet skewers)
1.    Heat grill pan or grill on high heat
2.    Season meat with salt and pepper, coat generously with blackening spice, place on soaked skewers
3.    Cook quickly until desired degree of doneness, rare to medium rare is recommended

METHOD:
(For mango avocado relish)

1.    Mix all ingredients in a mixing bowl, chill
2.    Serve with filet skewer
3.    Add chopped macadamia nuts and lettuce cups
