PHOENIX -- Pulling together a fabulous Thanksgiving feast can be stressful. Chef Nathan Hirsch from Whole Foods says you can do yourself a huge favor by preparing as much as you can ahead of time.
Hirsch said all is not lost if you overcook your turkey breast. Just put it in an oven-safe pan, cover it about halfway with stock, cover it with foil and pop it into the oven for about five to 10 minutes.
"What that will do is moisten the turkey, re-hydrate it," he explained. "You'll have a much more tender and not dry breast."
If you need to thicken up your gravy, Hirsch says you can add a slurry of stock and corn starch to your boiling or simmering gravy. Stir well.
