Chef Josh Yazzie, 5th and Wine

Beer Soup
    Butter/olive oil
    3 stacks celery
    1 carrot
    3 cups beer
    4 cups chicken stock
    Thyme
    Parsley
    Bay leaf
    Salt and pepper
    2 cups grated cheddar
    1 tsp Worcestershire
    1 cup half and half
    Garnish: green onion and bacon


Grilled Beer Pork
    8 oz pork chop
    Brine
    2 cups beer Amber ale
    ½ cup coater
    1 tbsp peppercorn
    2 sprigs thyme
    ½ tbsp. salt
    1tbsp sugar
    2 cloves
Grill
Ginger salt and pepper
    2 tbsp kosher salt
    ½ tsp ground ginger
Olive oil

Slaw
    ½ Head Cabbage
    ½ small jicama julienne
    ½ apple julienne
    ¼ cup pickled red onion
Dressing  
    ½ cup mayo
    ½ tbsp. pickeled ginger
    2 tbsp green onion (green only)
    ¼ tsp togarash
    1 tbsp marin
    1 tbsp rice vinegar
    ½ tbsp. sake
