PHOENIX -- Eating local is a trend that's been popping up all over the Valley.
That's what Justin Beckett, the owner of Beckett's Table, strives for in his restaurant. The 3-year-old establishment only uses locally sourced ingredients from Arizona farms.
One of their specialties is a new twist on a regular fruit salad recipe. Instead of dicing fruit into a bowl, he slices watermelon, cantaloupe and tomato and stacks it on top of each other. To garnish, he adds some pickled Fresno chilies, peach vinaigrette and sea salt.
A sweet tea pie is also a healthy alternative to other pastries. It will be available at Beckett's Table for a month beginning Aug. 15.
Beckett plans to open up a Southern-themed restaurant at the end of the year.
